The Show

2019 James Beard Broadcast Media Award: Best Podcast

Copper & Heat is a podcast exploring the unspoken rules and traditions of restaurant kitchens through the stories of people that work in them.

Copper & Heat challenges the exclusionary systems that cooks and chefs have been upholding for generations. We focus on issues that underpin and enable exclusion in the restaurant industry that many don’t question. Why are professional kitchens organized the way they are? What makes a great chef? Who gets the most media attention and awards? Why is the culinary industry dominated by white men?

The restaurant industry is at a point where a lot of ground work has been laid for change. But in order for change to happen, more conversations about gender, race, and privilege in the kitchen need to take place. Copper & Heat is focused on starting conversations like that with the people that are working through these issues in restaurant kitchens every day.

 


Season 3: Pre-Shift

Named for the pre-service meetings where staff gets all the updates, specials, and other details, Pre-Shift is about getting you tips, tools, and resources of working in hospitality. 

We're focusing on the issues that hospitality workers face every day - from coping with stress to setting boundaries, from intersectionality to community organizing. We've talked to experts to get advice to help you navigate your work environment.

 

The Team

Katy Osuna  |  Creator | Executive Producer and Host 

Katy is formally trained as both a cook and an anthropologist. She has been working in the restaurant industry for 7 years, including 2 years as a chef de partie in the 3-Michelin-starred Manresa Restaurant. In addition to producing Copper & Heat, Katy continues to work as a cook and special projects consultant with Belcampo Meat Company in Oakland, CA.

 

Ricardo Osuna  |  Creator | Producer, Music, and Sound

Ricardo is a digital media producer and musician. By day, he works as at FFW, a website production agency. He is a classically trained composer and guitarist, and has worked as a freelance musician and sound engineer for 8 years.

Rachel Palmer | Story Editor

Rachel is an artist, educator, and self-proclaimed podcast fanatic. From jamming the graveyard college radio shift to grassroots reporting with the local radio station, she loves audio storytelling in its many different forms. She studied broadcast journalism and has been dabbling in the media industry for the past 8 years.
